The recipe was surprisingly easy to make! I didn't use an egg beater, I just used my hands! It was SO FUN LOL!! I also halved the ingredients, click on the link for the original recipe . This is what I did and it made 24 cookies about 5cm in diameter ^^
Ingredients:
125gm MeadlowLea spread (butter was the recommended ingredient)
100gm white chocolate coarsely chopped (I used half a block of Milky Way chocolate!)
130gm macadamias coarsely chopped
1 tsp vanilla essence (it's cheaper than extract, but they taste the same lol)
1/2 cup brown sugar
1/4 cup white sugar
1 1/4 cup plain white flour
1/2 tsp baking powder
1 egg
Method:
1. Preheat oven to 180°C and line two baking trays
2. Beat butter, brown sugar, white sugar and vanilla essence until combined
3. Add the egg and beat until combined
4. Sift in flour and baking powder, beat until there are no more lumps.
5. Mix in the nuts and chocolate, just until they are even in the mixture
6. Place spoonfuls onto the baking tray, make sure they are evenly spaced, and bake for 12-15 minutes or until light golden. Take them out and stand them for 5 minutes.
Tips:
* I don't have an electric beater, so I used my hands, I found that it was easier to smash out the lumps in the flour and butter. It was also really fun!! Remember to thoroughly wash your hands though!
* Don't wait until the cookie is firm inside the oven, take it out when it's golden and soft to touch without it sticking to your hand. When I first tried baking cookies, I waited until they were firm to touch, and LOL they harden when they cool and DAMN they became rocks that could stone people to death HAHAHA
The ones on the right are slightly under-cooked because they had a rack above the tray, whereas the left side was just on the tray. I guess next time I won't be using that rack!
